SENSORY EVALUATION OF LADDU ENRICHED WITH TINOSPORA CORDIFOLIA-IRON RICH POWDER

Abstract

Tinospora cordifolia (Guduchi) is a large deciduous climbing shrub in the Menispermaceae family. T.cordifolia is used to cure a variety of ailments, including diarrhea, jaundice, fever, anaemia, diabetes, urinary difficulties, and skin diseases. Objective of the study is to Standardize and Formulate giloy laddu for anemic people and to see its acceptance. The purpose is to develop nutritious laddu and incorporate Guduchi powder in it. Guduchi powder was collected from the local market and used in the preparation of making standard sesame laddus with 3 variations of 10gms,15gms and 20gms respectively incorporated with Guduchi powder and amla. The formulated recipe and the standard recipe were given to 30 panel members for sensory evaluation for highest acceptability. Overall acceptance was highest for variation 2 with 10gms of Guduchi incorporated in the recipe laddu. From the overall acceptability of variation 2 the panel members rated the attributes that the laddu was dry in appearance, light brown in color, the texture was grainy, flavor was strong and tangy in taste. Thus the study concluded that utilization of giloy powder improved the nutritional value and Daily consumption of 10gms of giloy laddu for 3 months increase the heamoglobin content and can eradicate anemia.
